Making the most of what the forest and nature provide – this is the centuries-old philosophy behind the nine “Baiersbronn Treasures”, whose diversity delights. Goat’s cheese with a hint of dost – the Black Forest’s characteristic herb – is only available from May to October, when the goats enjoy enough sunshine and fresh pasture for its exquisite flavour. Forest honey is entirely handmade using methods passed down through generations. Grinde ham and Grinde loin bacon are dried for eight weeks on the rugged ridge of the 1,164-metre-high Hornisgrinde. Buhlbach trout, game and lamb specialities, “grape mustard sauce”, as well as forest honey and spruce tip ice cream can all be enjoyed in cosy parlours, mountain huts in the “Culinary Hiking Paradise”, and family-run inns. It is no surprise that an exceptional concentration of top-class cuisine has developed here over decades – with a total of eight Michelin stars, Baiersbronn attracts international attention.

The broom beckons! Seasonal wine taverns along the Badische Weinstraße
The Straußwirtschaft – known in the northern part of the Badische Weinstraße as a Besenwirtschaft – is one of the oldest forms of seasonal wine taverns in the German-speaking world. It originates from the tradition of winegrowing families marketing their own wine directly. In spring and autumn, vintners display their brightly decorated broom signs – an invitation to visit the tavern or the winery. What is served is what grows in their own vineyards, accompanied by dishes prepared from the kitchen, cellar and smokehouse.
